Spicy Seafood Stew
1 Large Onion, Chopped
1 Red Chilli, Finely Chopped
4 Cloves Garlic, Chopped
1/2 Teaspoon Paprika
1 Teaspoon Ground Cumin
700ml Stock (Chicken/Fish or Veg)
250g Chopped tinned tomatoes
200g Peeled Prawns
500g Firm White Fish Chunks (Monkfish)
500g New Potatoes, boiled.
Fry the onion in olive oil until soft then add the garlic and chilli. Cook for a minute or two then add paprika, cumin, stock & tomatoes. Cook for about 5 minutes then whiz in blender -- can blend to liquid or leave chunky.
Return to pan & simmer for about 10 minutes then add the new potatoes.
When ready add fish and seafood, cook through then garnish with corriander.
Serve with a crusty bread.
